I totally love pancakes. Not as much as my buddy Mikey “Pancakes” Whitfield – he is THE pancake man!
However, as a chick preparing for a beach holiday Down Under, pancakes are on the banned substances list.
Today I have the perfect substitute. I’ve perfected a SUPER delicious recipe for low carb and guilt-free protein pancakes. They are SO awesome, I think I prefer this recipe to the real deal. This is one of my secret weapons in the morning (and also makes a great snack for the road!)
It’s really quite simple. Just in time for you to try it out for the holidays!
INGREDIENTS
- 2 scoops vanilla protein powder (I love BioTrust Nutrition)
- ½ cup organic egg whites
- 4 tbsp almond milk (or whole milk)
- 2 tbsp ground flax seeds
- 2 tsp cinnamon
- 1 tsp virgin organic coconut oil
- Generous handful of organic blueberries
Mix all of the ingredients together and mash the blueberries a little. This will make it easier to flip, trust me. Spray a pan with olive oil cooking spray and heat to medium. Pour a small amount into the pan and cook one side until the little bubbles appear. Carefully flip it over and cook the other side until center is done. Makes approximately 4 little pancakes. Add strawberries or more blueberries to serve.
